RESUMO

The production of beef carries significant environmental repercussions on a worldwide level. Considering that the production of beef in Alpine mountainous regions, such as South Tyrol (Italy), constitutes a modest yet progressively growing segment within the local agricultural sector focus must be put on minimizing the environmental impact of producing one kilogram of meat, while also accounting for the carbon sequestered by Alpine pastures in such marginal areas. To this end 20 beef farms distributed in the South Tyrolean region (Italy) were divided based on the age at slaughter of the beef cattle: 10 farms with a slaughter age of 12 months (SA12) and 10 farms with a slaughter age of 24 months (SA24). Live cycle assessment (LCA) approach was used, and the impact was estimated using two functional units (FU): 1 kg of live weight (LW) and 1 kg of carcass weight (CW). Global warming potential (GWP100, kg CO2-eq), acidification potential (AP, g SO2-eq), and eutrophication potential (EP, g PO4-eq) were investigated. Furthermore, within the account, the carbon sequestered by pastures and permanent grassland has been included for estimated the overall carbon footprint. In terms of GWP100, the SA12 system proved to be significantly lower for both two functional units under studies, with reductions of 8.5 % and 7.4 % in terms of LW and CW, respectively, compared to the SA24 system, specifically, the SA12 system showed an environmental impact in terms of GWP100 of 19.5 ± 1.1 kg CO2-eq/kg LW, which was significantly lower than the SA24 system that exhibited a value of 22.9 ± 1.1 kg CO2-eq/kg LW (P < 0.05). When accounting for the carbon sequestered within the system, the observed values in terms of GWP100 are significantly lower for SA12 compared to SA24, 17.6 ± 1.5 vs. 20.9 ± 1.5 kg CO2-eq/Kg LW (P < 0.05), and 29.2 ± 2.5 vs. 38.7 ± 2.5 kg CO2-eq/Kg CW (P < 0.01). These differences are due to less purchase of concentrated feed and greater use of natural resources such as pastures and permanent grasslands. The research indicated that the production of beef in the Alpine region of South Tyrol predominantly occurs within extensive parameters, leading to a satisfactory environmental profile, also including the C sequestration.

In this study, we have included the water footprint (WF) in the process of optimizing animal feed rations. The global footprint of cattle production accounts for the largest share (33%) of the global water footprint of livestock production. Using two homogeneous groups of Limousine × Podolian young bulls, two different diets were compared: corn silage feeding (CSF), with a corn silage-based diet; and triticale silage feeding (TSF), with a triticale silage-based diet. Silage constituted about 41% and 46% of the feed composition (for CSF and TSF, respectively). Diets were characterised by the same energy and protein content. Despite the lower WF in the TSF group than in the CSF group (7726 vs. 8571 L/day/calf respectively), no significant differences were found in animal performances (i.e., daily weight gain and final weight), feed conversion or income over feed costs. These results show that simple production decisions can have a significant impact on water resource. Therefore, the use of triticale silage should be further promoted, especially in world regions with limited water resources where low WF feed formulation is more strategic than elsewhere.

Water buffaloes have morphological and behavioral characteristics for efficient thermoregulation. However, their health, welfare, and productive performance can be affected by GW. The objective of this review was to analyze the adverse effects of GW on the productive behavior and health of water buffaloes. The physiological, morphological, and behavioral characteristics of the species were discussed to understand the impact of climate change and extreme meteorological events on buffaloes' thermoregulation. In addition, management strategies in buffalo farms, as well as the use of infrared thermography as a method to recognize heat stress in water buffaloes, were addressed. We concluded that heat stress causes a change in energy mobilization to restore animal homeostasis. Preventing hyperthermia limits the physiological, endocrine, and behavioral changes so that they return to thermoneutrality. The use of fans, sprinklers, foggers, and natural sources of water are appropriate additions to current buffalo facilities, and infrared thermography could be used to monitor the thermal states of water buffaloes.

Hypothermia is one of the principal causes of perinatal mortality in water buffaloes and can range from 3% to 17.9%. In ruminants, factors affecting hypothermia in newborns may be of intrinsic (e.g., level of neurodevelopment, birth weight, vitality score, amount of brown fat, skin features) or extrinsic origin (e.g., maternal care, environmental conditions, colostrum consumption). When newborn buffaloes are exposed to cold stress, thermoregulatory mechanisms such as peripheral vasoconstriction and shivering and non-shivering thermogenesis are activated to prevent hypothermia. Due to the properties of infrared thermography (IRT), as a technique that detects vasomotor changes triggered by a reduction in body temperature, evaluating the central and peripheral regions in newborn buffaloes is possible. This review aims to analyze behavioral, physiological, and morphological strategies and colostrum consumption as thermal compensation mechanisms in newborn water buffalo to cope with environmental changes affecting thermoneutrality. In addition, the importance of monitoring by IRT to identify hypothermia states will be highlighted. Going deeper into these topics related to the water buffalo is essential because, in recent years, this species has become more popular and is being bred in more geographic areas.

It is widely assumed that the quality of human-animal interactions may have a strong impact on animals' living conditions and is fundamental to improving farm animal welfare. This work aims to evaluate the effectiveness of methods for assessing and monitoring the welfare of lactating goats. In particular, attention was paid to the methods regarding the assessment of the human-animal relationship. The experimental protocol included three tests and observations in the milking parlour, namely: avoidance distance in the pen, avoidance distance at the manger, approach test within 2 min and behavioural observations of stockmen and animals during milking. Fourteen dairy goat farms located in the province of Potenza (Southern Italy) with flocks ranging in size from 67 to 450 lactating goats were used. All farms raised the Rossa Mediterranean goat breed. The percentage of goats that permitted themselves to be touched at the manger (mean ± SD: 12.36 ± 9.50) was higher than that found in the pen (9.67 ± 11.86) and within 2 min inside the pen (8.19 ± 13.78). The avoidance distance at the manger (0.63 ± 0.28 m) was shorter than that recorded in the pen (1.19 ± 0.58 m). Avoidance distance at the manger was positively correlated with that in the pen (Spearman correlation test (rs) = 0.607; p < 0.01), as was the percentage of goats touched at the manger and in the pen (rs = 0.647; p < 0.01). Approximately 60% of the stockman interactions observed during milking were neutral, while positive and negative interactions had similar values to each other, approximately 20%. The number of neutral stockman interactions was positively correlated with the percentage of goats moving when approached at a distance >1 m (rs = 0.799; p < 0.001) and was negatively correlated with the animals touched at the manger (rs = -0.607; p < 0.05), in the pen (rs = -0.613; p < 0.05) and within 2 min (rs = -0.669; p < 0.01). As regards the degree of association between the behaviour of the milker and the animals during the milking routine, the percentage of neutral interactions tended to be positively correlated only with the number of kicks performed by the animals (rs = 0.476; p < 0.10). It is concluded that avoidance distance at the manger and in the pen, as for other farm animals, are valid tests to evaluate the human-animal relationship in goats. In addition, avoidance distance at the manger may reliably replace the test performed in the pen.

Traditional agri-food products (TAPs) are closely linked to the peculiarities of the territory of origin and are strategic tools for preserving culture and traditions; nutritional and organoleptic peculiarities also differentiate these products on the market. One such product is Caciocavallo Podolico Lucano (CPL), a stretched curd cheese made exclusively from raw milk from Podolian cows, reared under extensive conditions. The objective of this study was to characterise CPL and evaluate the effects of ripening (6 vs. 12 months) on the quality and organoleptic properties, using the technological "artificial senses" platform, of CPL produced and sold in the region of Basilicata, Italy. Additionally, this study represents the first analysis of cheese-related digital communication and trends online. The study found no significant differences between 6-month- and 12-month-ripened cheese, except for a slight increase in cholesterol levels in the latter. CPL aged for 6 and 12 months is naturally lactose-free, rich in bioactive components, and high in vitamin A and antioxidants and has a low PUFA-n6/n3 ratio. The "artificial sensory profile" was able to discriminate the organoleptic fingerprints of 6-month- and 12-month-ripened cheese. The application of a socio-semiotic methodology enabled us to identify the best drivers to create effective communication for this product. The researchers recommend focusing on creating a certification mark linked to the territory for future protection.

The aim of the study was to evaluate the effects of GnRH administrated at day 35 after artificial insemination (AI) on the reproductive performance of buffalo cows. In ten buffalo farms in the period January−February, 481 buffalo cows were subjected to estrus synchronization protocol and fixed-time artificial insemination (Ovsynch−TAI program). Radioimmunoassays (RIA) for pregnancy-associated glycoproteins (PAGs) were used to detect pregnancy at day 28 after AI (cut-off value: ≥1 ng/mL). Among pregnant subjects, those with PAG values between 1 and 2.5 ng/mL were considered at risk of embryonic mortality (EM) and were assigned into two groups: treated (T; n = 57) control (C; n = 57). Treated buffaloes received 0.01 mg of buserelin acetate intramuscularly on day 35 after AI, whereas control buffaloes received no treatment. The pregnancy diagnosis was confirmed at day 60 through PAGs level and rectal palpation. The treatment with GnRH had a significant effect (p < 0.001) in reducing EM. Between days 28 and 60 after AI, the animals that experienced EM were only 2/57 in the T group, while were 13/57 in the C group. Moreover, GnRH treatment produced a significant increase (p < 0.001) in the PAG concentration between day 28 and day 60. Administration of GnRH at day 35 after AI in animals considered at risk of low embryo survival based on PAG levels allowed a reduction in pregnancy losses and improved the pregnancy rate during low-breeding season in buffalo.

The present review aims to integrate the anatomical characteristics of the mammary gland and the neurophysiology of milk ejection to understand the milking capacity of the water buffalo. Since one of the main uses of this species is milk production, this article will analyze the controversies on the use of oxytocin as a stimulant during milking as well as the existing alternatives that farmers apply to promote correct stimulation during milk letdown. According to the available literature, the efficiency of the milking process, the quality of the milk, and the health of the animals are elements that require the consideration of species-specific characteristics to enhance the performance of buffaloes. The incorporation of technological innovations and competitive strategies could contribute to a better understanding of water buffalo in the milk industry.

Agricultural livestock production ranks among the most environmental impactful industry sectors at the global level, and within the livestock sector, beef production accounts for a large proportion of environmental damage. Beef production in Alpine mountain regions, such as in South Tyrol (Italy), is a small, but increasing agricultural sector. Thus, the aim of this study was to examine the environmental impact of different organic and conventional beef production systems in South Tyrol and to compare their environmental impact and effect on biodiversity under Alpine production conditions. Live cycle assessment (LCA) approach was used and 1 kg of live weight (LW) was chosen as functional unit (FU). Global warming potential (GWP, kg CO2-eq), acidification potential (AP, g SO2-eq), eutrophication potential (EP, g PO4-eq), non-renewable energy use (NRE, MJ-eq), land occupation (LO, m2 organic land/year) and biodiversity damage potential (BDP) expressed in potential disappeared fraction (PDF) were investigated. The study involved 18 beef cattle farms in the South Tyrolean region: Conventional calf-fattening farms (CCF = 6), organic suckler cow farms (SCF = 6), and conventional heifer/ox fattening farms (HOF = 6). The CCF system showed a higher environmental impact compared to SCF and HOF systems for all impact categories (P < 0.05). Between the organic and the conventional system (SCF and HOF), no significant differences (P > 0.05) were found for most of the considered impact categories (means ± SEM per FU): GWP: 19.8 vs 17.1 ± 4.2 kg CO2-eq, AP: 11.4 vs 9.3 ± 4.7 g SO2-eq, EP: 4.1 vs 2.8 ± 1.2, NRE: 21.9 vs 13.8 ± 7 MJ-eq, SCF and HOF respectively. Only for LO (70.8 vs 44.1 ± 17.7 m2 organic/y, P < 0.01, SCF and HOF respectively) and the effect on BDP (-1.93 vs -0.85 ± 0.35, PDF, P < 0.01, SCF and HOF respectively) differences between organic and conventional production methods could be revealed. The study showed that beef cattle husbandry in the Alpine area has a satisfactory environmental performance. In particular, the systems studied showed a positive impact in terms of biodiversity.

RESUMO

The present study aims to identify margins for the improvement of dairy animal welfare and production based on the quality of the human-animal relationship (HAR). The main tool proposed to improve the quality of HAR in dairy animals is training of stock-people by targeting their attitude and behaviour. Given that a good quality HAR may benefit the welfare of dairy animals and productivity, new technologies, by monitoring the handling routine on farm, may be more effective in promoting good practices. In particular, the implementation of new technologies may allow identification of specific inappropriate behaviours to be targeted at stockperson level, thus increasing the efficacy of training. However, an issue related to the introduction of new technologies in the farms, particularly in those that follow traditional farming practices, is the resistance to innovation which may be encountered.

This study aimed to evaluate the effects of the use of chickpea meal in substitution of soybean meal on plasma metabolites, reproductive response, milk yield and composition and milk coagulation traits of primiparous buffaloes in early lactation. Eighteen primiparous buffaloes were blocked by age, body weight and days in milk and equally allotted to two experimental groups from 10 to 100 days of lactation. The experimental diets consisted of the same forage integrated with two different isonitrogenous and isoenergetic concentrates containing either 210 g/kg of soybean meal or 371 g/kg chickpea. The use of chickpea meal had no negative effects on dry matter intake (p = 0.69), body condition score (p = 0.33) and milk yield (p = 0.15). Neither milk composition nor blood metabolites were influenced by dietary treatments (p > 0.05), but an increment of urea concentrations in milk (p < 0.05) and blood plasma (p < 0.001) were observed in buffaloes fed chickpeas. Moreover, no effect (p > 0.05) of the dietary treatment was highlighted on milk coagulation traits as well as buffalo reproductive responses. We concluded that soybean meal can be replaced by chickpea meal in the diet for primiparous dairy buffaloes in the early lactation period without impairing their productive and reproductive performance.

This study aimed to assess the relationship between stockperson behavior and buffalo behavior. The research was carried out in 27 buffalo farms. The behavior of stockpeople and animals during milking and the avoidance distance at the feeding place were recorded. Recordings were repeated within one month to assess test-retest reliability. A high degree of test-retest reliability was observed for all the variables with Spearman rank correlation coefficients (rs) ranging from 0.578 (p = 0.002, df = 25) for the number of kicks performed during milking to 0.937 (p < 0.001, df = 25) for the percentage of animals moving when approached by ≤ 0.5 m. The number of negative stockperson interactions correlated positively with the number of kicks during milking (rs = 0.421, p < 0.028, df = 25) and the percentage of animals injected with oxytocin (rs = 0.424, p < 0.027), whereas the percentage of negative stockperson interactions correlated positively with the percentage of buffaloes moving when approached at a distance >1 m (rs = 0.415, p < 0.031, df = 25). In a subsample of 14 farms, milk yield was correlated positively with the number of positive interactions (rs = 0.588, p < 0.027, df = 12) and correlated negatively with the number of steps performed by the animals during milking (rs = -0.820, p < 0.001, df = 12). This study showed that the quality of stockpeople interactions may affect buffalo behavior and production.
